Baking Baker's
Are you looking for a quick healthy, and very yummy dinner? How about trying Greek Pizza! My husband and I made this a few weeks ago and it was quite and tasty treat. We really enjoyed eating something so different from our usual routine of dinners. We hope you enjoy it as much as we did. 


Ingredients 

4 Pita Breads 6inches a piece
1 cup of reduced fat ricotta cheese
1/2 teaspoon garlic powder
1 package of fresh spinach
2 medium tomatoes diced (and I season them with balsamic vinegar, salt, pepper, olive oil, and Italian seasonings)
3/4 a cup of crumbled feta cheese
3/4 teaspoon of dried basil

How to make
Place pita breads on a baking sheet. Combine ricotta, garlic powder, and spread over pitas. Top with spinach and your seasoned tomatoes. Then place feta cheese on top with a sprinkle of basil. Bake at 400 for 12-15 minutes or until the bread is browned

I haven't blogged in forever and oh do I miss it! I am so sorry I have been away for so long. I am so excited to be back! I have a lot of recipes to share to get ready! Today I am sharing with you one of my families very favorite recipes. It is my grandmas Lemon Poppy Seed cake which she got from a dear friend many years ago! It is one of my personal favorites. I love how moist and is and how it has the right hint lemon in it, not too over powering I promise!
Lemon Poppy Seed Cake
1 yellow cake mix
1pkg of vanilla instant pudding mix
1 cup of oil
4 eggs
1tsp.almond extract
2 Tablespoons of poppy seeds
1 cup of hot water

Directions: 
Mix together dry ingredients then add oil, eggs one at a time, almond extract, poppy seeds, and hot water. Bake at 350 for forty minutes. Take out a bunt pan and make sure you grease and flour the pan prior to placing the batter into the pan. After the 40 minutes have passed. Take the cake out of the over and take a butter knife and go along the outside edges. Then take a plate and dump out the lemon cake hopefully into one piece.  Let the cake cool. While cake is cooling you need to drizzle the glaze on top of the hot cake. 

Glaze
1 cup of powdered sugar
Juice from 1 lemon
1 teaspoon of almond extract
Mix together and pour over the hot cake!

Mmmm...this is one of my favorite recipes of all times, White Chicken Chili. I got this recipe last year from my sister-in-law and I promise you I have made in at least a dozen times since them. It makes quite a large batch so I often will make a large pot and freeze half of it for a later date! Who doesn't like to come home from a long day at work to a meal that has already been cooked and all you have to do is re-heat it. I just love recipes like that, otherwise I find I get burned out of cooking fast. Hope you find this recipe as delicious as we do! 
What you need:
- 1 rotisserie chicken shredded
- 1 can of chicken broth
- 1 medium yellow onion chopped
- 1 1/2 tsp of garlic powder ( we really like garlic so we often will use minced garlic and a little more than 1 1/2 tsp but it is completely up to you and your liking!) 
- 1 Table spoon of olive oil
- 2 cans of great northern white beans
- 2 cans of green chili's 
- 1 teaspoon of salt
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- 1/2 tsp. pepper
- 1/4 tsp cayenne pepper
- 1 cup of sour cream 
- 1/2 cup whipping cream 
- Frito's 
- shredded cheese 

In a stock pot place shredded chicken in the bottom of pot. Cover the chicken with chicken stock, the chopped yellow onion, garlic, and olive oil. Bring your pot to a boil and then add your beans, green chilies, salt, cumin, oregano, pepper, and cayenne. Let this simmer on low heat for about 30 minutes. Then add sour cream and whipping cream. Stir this together and let it simmer for a couple of minutes to thicken. Then fill a bowl with Frito's, top with chicken chili, sprinkle some cheese on top and you have yourself a wonderful hearty  Fall dinner!

Well it's tradition on the Holiday side of my family that when we are all together we always have our Grandmothers famous Spaghetti and Meatballs for some meal, this meal typically lands on Christmas every year but occasionally I will get a hankering for her yummy meatballs. So a few Saturday's back I was cooking lots of meals for the week to get a head start. While cooking I started thinking hmmm... why not start a pot of meatballs. So I did.This recipe is very simple but it does take some time for the meatballs to cook.
This is what you will need...
1 lbs. of ground turkey
1/2 cup of cracker crumbs
2 eggs
1/2 tsp. salt
1/4 tsp pepper
1 medium onion chopped
1 clove of minced garlic
1/4 tsp red pepper
1 1/2 tsp parm cheese
Mix ingredients in a medium sized bowl with your hands. Form into small bowls making sure there are no cracks. Place in a medium size sauce pan and cover with red sauce. Cook on a low temperature for 1 1/2 hours, stirring occasionally. Check to make sure they are cooked thoroughly and add to your favorite pasta for a delicious Italian meal!

Wow, its been too long since I have been on here. The school year is finally underway and I finally have some free time. I am really getting excited for some fall weather so I have decided to add one of my favorite fall recipes to share with you today. It is a delicious moist pumpkin bread which is so fitting for this time of year. The smell alone make its feel like fall in your home! The recipe is short and simple but to die for! I hope your family enjoys it as much as mine! We use it as a great way to start our mornings with such a tasty breakfast! Hope you enjoy!
What you will need...
- 2/3 cup of shortening
- 2 cups of sugar
- 1 cup of crushed pineapple
- 1 cup of pumpkin
- 3 1/2 cups of flour
- 2 teaspoons of soda
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 1 teaspoon of cloves
- 1 1/2 teaspoons of cinnamon
- 1 1/2 sticks of softened butter
- 4 eggs

Mix together butter, shortening, sugar. Then add eggs, soda, salt, baking powder, cloves cinnamon. Slowly add flour about a 1/2 a cup at a time. Then mix in pineapple and pumpkin. Pre-heat you oven 350 degrees. Spray a loaf pan with Pam or any other non- stick cooking spray. Bake for 40-45 minutes or until a knife comes out clean after being inserted in the middle of the loaf. Let it cool for about 10 minutes before taking it out of the pan. This recipe will make two loaves of bread. I often will eat one and freeze one for later! Yesterday my hubby and I did a little exploring of San Diego. We went and ate at Kansas City BBQ, the place where the piano scene from top gun was filmed. It was very fun seeing all the Top Gun memorabilia and getting a taste of my past roots in Kansas City. We also explored parts of Balbo Park and Sea Port Village. After our day of exploring we decided we would bake something together. This is truly one of my favorite things to do with my husband, so I was very excited to find a new recipe. We searched in many cookbooks but finally settled on this recipe which we found on all recipes.We went to Albertsons got all the groceries we needed for our dinner and dessert. This is a two part recipe...we started with making and freezing the cookie dough, made/ate dinner, then completed the cupcake portion of the recipe. This dessert may be a lot of work but I promise you they are completely worth it! 


What you will need: 

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup miniature semisweet chocolate chips
  •  
  • 1 (18.25 ounce) box yellow cake mix
  • 1 1/3 cups water
  • 1/3 cup canola oil
  • 3 eggs

How to make these cupcakes:
   Part 1: With an electric mixer beat butter, white sugar, and brown sugar until smooth. In a separate medium sized bowl mix together flour, baking soda, and sea salt. Then slowly add to the electric mixing bowl. Then fold in the chocolate chips. Now, take out a small baking sheet and place tablespoon sized balls of cookie dough onto the small baking sheet. Place baking sheet into the freezer for about 2 hours until frozen.
  Part 2: Preheat your over to 350. In your electric mixer beat 3 eggs. Then add cake mix, water, and canola oil. Line your muffin pan with paper liners and fill with cake batter 2/3 full. Next, place a frozen cookie dough ball on the top of each cupcake. Bake for 15-20 minutes until a toothpick inserted into the CAKE PORTION of the cupcake comes out clean. You do not want to over cook these cupcakes because then the cookie dough will begin to cook. Cool in the pan for 10 minutes on a wire rack. 
  Part 3: Chocolate Icing!!!! I chose to put a chocolate cream cheese frosting on top of my cupcakes and it was delicious. Here is what you will need.
      Ingredients:   
          1 (8 ounce) package cream cheese
    • 1/4 cup confectioners' sugar
    • 1/4 cup heavy whipping cream
    • 1 cup semisweet chocolate chip
  •      Directions: Fill a sauce pan 1/2 full with water. Place a glass bowl on top of the sauce pan and bring water to a boil. Place chocolate chips and heavy cream into the glass bowl and mix until smooth. Then remove from heat. In a mixing bowl cream together powdered sugar and cream cheese until smooth. Slowly add chocolate mixture into the cream cheese mixture. Then ice cooled cupcakes with your delicious chocolate cream cheese frosting.

Today I wanted to share with you a recipe that I made a few weeks ago that I absolutely fell in love with. I cook a lot of chicken and turkey and sometimes it gets a little old, so I always look for recipes that are just delicious. This recipe is very hearty. It makes a lot so what I did was put half of it in the fridge for leftovers and the other half  I have frozen for sometime in the future. I always like to cook for my hubby when I am out of town and this is an easy one for him to just warm up! We both absolutely loved this recipe and its good for you too! Its only 198 calories per serving (1 1/4 cups) ! I got this recipe from Ginas Skinny Recipes which is another great website to look at for other healthy delicious recipes. 


Ingredients
  ~ 1 lb of lean ground turkey
  ~ 1 medium chopped onion
  ~ 1 bell pepper chopped 
  ~ 1 can of rotel with green chilies
  ~ 1 can of corn
  ~ 1 can of kidney beans
  ~ 8oz tomato sauce
  ~ 16oz fat free refried beans 
  ~ 1 package of low sodium taco seasoning
  ~ 2 1/2 cups of low sodium chicken broth


Directions:
   In a large pot brown the turkey. When it is browned add in chopped onions and bell pepper. After 2-3 minutes add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning, and chicken broth. Bring the pot to a boil and let simmer for 10-15 minutes. Serve with tortilla chips, shredded cheese,  light sour cream, and what ever other toppings your family may enjoy! Hope you enjoy and are inspired to get cooking!

 Today I am trying something new with my blog. I am linking up with my friend Megan's blog for Foodie Friday! I love cooking and baking so today I am sharing with you another one of my grandmothers recipes. Today we are cooking up some Potato Salad. This Potato Salad is cooked at all BBQ's in my family. The funny thing is that every one in my family loves this stuff except for my grandmother and I who are always the ones who make it. I am just a picky eater and am weird about certain textures, but if you love potato salad I promise I have never found anyone who didn't love this recipe. This is one of my husbands favorites but his family made their potato salad a little different than my family, so I thought why not combine the two family recipes. So here it is and I hope you enjoy it as much as our families have! 

Ingredients:
     4 Medium Sized Potatoes
     4- 5 Green Onion
     2 Ribs of Celery 
     4-5 Slices of Bacon 
     1  Cup of Mayo
     1-2 tsp. of Mustard
     Salt and Pepper to Taste
     Pinch of Paprika 

Directions:
   First bring a large pot of water to a boil. Place the entire potato into the pot and boil until soft. When soft remove the potato from the pot and set aside to cool. Once cool remove the skin of the potato and cut into chunks and place it into a large bowl. Then cut up your green onion and celery ribs and place them into the same bowl. In a smaller bowl put the mayo and add a little mustard to make the mixture a pale yellow color. Then mix the mayo mixture into the larger bowl of potato's, and add salt and pepper to taste. Then garnish with your crumbled up bacon and a sprinkle of paprika.

The past few days have been a bit difficult and there is nothing that brings a smile to my face like baking. I was tired of making the usual desserts and I have been craving cupcakes over the past few day. I stumbled across this recipe on allrecipies and decided to give it a try. I had majority of the ingredients already at my house and was on my way to the store anyways so I could pick up the other ingredients I would need. I really hope these cupcakes are as delicious as they sound. Hope you give them a try! 


Ingredients:
  
·         1/3 cup shortening
·         1/3 cup peanut butter
·         1 1/4 cups packed brown sugar
·         2 eggs
·         1 teaspoon vanilla extract
·         1 3/4 cups all-purpose flour
·         1 3/4 teaspoons baking powder
·         1 teaspoon salt
·         1 cup milk
·         16 miniature peanut butter cups
·         1 hershey chocolate bar 

First cream together shortening, peanut butter, and brown sugar till fluffy. Add eggs one at a time, then add vanilla. Then combine flour, baking powder, and milk. Then fill a muffin pan with muffin liners or spray with pam. Fill muffin cups with 1/4 cup of batter. Then press a peanut butter cup into the center of each until the top edge is even with the batter. Baker at 350 for 22-24 minuets. Cool for ten minutes. While they are cooling melt chocolate bar and drizzle chocolate sauce on the tops of these cupcakes!

Here is one of my favorite dessert recipes of all times, Oatmeal Chocolate Chip Cookies!  I got this recipe from my grandmother about three years ago, and I have probably made them at least 50 times! My grandmother got this recipe while on a trip. They went to a friends home and arrived with the wonderful aroma of these delicious cookies. The smell was so enticing that they had to try them. My grandmother loved them and received this recipe over 50 years ago and we are still cooking them up for so many great occasions today! Hope you enjoy!


Ingredients :
1 cup shortening
¾ cup brown sugar
¾ cup white sugar
2 eggs
1 tsp baking soda
1tsp vanilla
1 tsp salt
1tsp hot water
1 ½ cup flour
2 cup of quick minute oatmeal
1 bag Chocolate chunks
                             
              First cream together shortening and sugars. Then add all the wet ingredients and mix well. Then add flour a half a cup at a time until mixed. Then combine oatmeal and chocolate chunks. Bake at 375 for 8 minutes!
Hope your family loves this new twist on Chocolate Chip Cookies!
